Job Responsibilities:
Source and procure high-quality ingredients specific to Japanese cuisine (e.g., sushi-grade fish, nori, specialty rice, wasabi);
Negotiate with domestic/international suppliers (emphasis on Japanese/Asian vendors);
Manage inventory of perishable goods with FIFO rotation system;
Conduct market research on seasonal seafood availability and pricing trends;
Maintain purchase records and liaise with accounting for AP processing;
Establish logistics of delivery schedules, monitor progress and coordinate logistics for time-sensitive imports (e.g., Japan Air Cargo shipments);
Collaborate with Executive Chef on menu development sourcing strategies;
Invite tenders, consult with suppliers and review quotations.
Qualifications / Skills:
2 years purchasing experience in food service/hospitality;
Strong knowledge of Asian seafood markets/suppliers;
Proficiency in inventory management software;
Be an advocate for positive change and improvement within the company;
Communicate effectively to ensure transparency on all matters.
