I stock up on Corned Beef and Pastrami when it goes on sale and then can it so it doesn't take up space in the freezer. Trust me, for us it tastes almost the same when you use it as cooking it from fresh. "Canned Corn Beef" from the grocery store does NOT taste like real corned beef you'd get from a deli.

We also can Chicken, Chicken Broth, Beef and Beef Broth, Meatloaf (take the mince, add your spices, pack it in the jar and can it. It cooks in the jar while canning.) French Pea Soup (Thick Habitant style) We are currently using meats canned 2 years ago and there is no off taste or spoilage.

You can find a lot of information on the internet to download canning instructions, times, recipe books including old Ball books and many Government Ag Department canning books from across Canada and the US.
